Wood Smokers for Low-and-Slow Barbecue

A dedicated wood smoker does one thing and does it exceptionally well — it cooks food low and slow with real wood smoke, producing the deep flavor and tender texture that defines traditional barbecue. Brisket, pork shoulder, ribs, whole chickens, and even fish take on an entirely different character when they're smoked over wood for hours at controlled temperatures between 200°F and 275°F.

Wood smokers use hardwood logs, chunks, or pellets as their primary fuel and heat source. The smoke passes over the food as it cooks, building layers of flavor from the wood species — hickory for bold, classic barbecue taste; cherry and apple for sweeter, milder smoke; mesquite for intense, sharp flavor; and oak for a balanced all-purpose smoke.
